Holiday Mock Champagne
1 gallon apple juice, chilled to almost freezing
1 gallon Ginger Ale, chilled to almost freezing
1 quart fresh strawberries (if unavailable, use dry frozen
strawberries without juice or sugar)
When apple juice is thoroughly chilled and Ginger Ale is almost
freezing (slushy consistency), pour apple juice into a large punch
bowl, and then, very carefully and slowly, pour the Ginger Ale into
the bowl against the side of the bowl - this preserves the
carbonation of the Ale.
Slowly add chilled strawberries, one at a
time. Float mint leaves on top, if desired.
Serve in champagne
flutes with a candy cane hanging over the lip of the glass.
