Lemon Bar Cookies Recipe

Crust:
1 C. cold butter
2 C. flour
1/2 C. powdered sugar

Filling:
4 beaten eggs
2 C. sugar
1/2 C. fresh lemon juice
1 t. lemon zest
1/2 t. salt
1 t. baking powder
1/4 C. flour
Powdered sugar for sprinkling

Preheat oven to 350 F.  with rack in the middle position.

Cut each stick of butter into 8 pieces. Pulse with the flour and the powdered sugar in a food processor until it looks like coarse cornmeal. Spread it out in a greased 9 x 13-inch pan and pat it down with your hands.

Bake at 350 F. for 15 to 20 minutes, or until golden around the edges. Remove from oven. Mix eggs with sugar. Add lemon juice and zest. Add salt and baking powder and mix. Then add flour and mix thoroughly.

Pour this mixture on top of the pan you just baked and put back into the oven. Bake at 350 degrees for another 30 - 35 minutes. Then remove from the oven and sprinkle on additional powdered sugar.

Let cool thoroughly and cut into brownie-size bars.

Makes about 20 bars.
