Peanut Butter Brittle Bars
BASE:
3/4 cup cornstarch
1/2 cup flour
1/3 cup powdered sugar
1/2 cup butter, cold and cut into pieces
1/4 teaspoon salt
FILLING:
2 eggs
3/4 cup corn syrup
3/4 cup sugar
1/2 cup peanut butter
2 tablespoons butter, melted
1 teaspoon vanilla
3/4 cup dry roasted peanuts
BASE: Preheat oven to 350�F. Lightly spray 13x9x2-inch baking pan
with cooking spray.
In large bowl with mixer at medium speed, beat
cornstarch, flour, powdered sugar, margarine and salt until mixture
resembles coarse crumbs. Press firmly into bottom and 1/4 inch up
the sides of prepared pan. Bake for 15 minutes or until golden
brown.
FILLING: In large bowl, combine eggs, corn syrup, sugar, peanut
butter, margarine and vanilla until well blended. Stir in peanuts.
Pour over hot crust; spread evenly.
Bake for 20 minutes or until filling is firm
around edges and slightly firm in center. Cool on wire rack. Cut
into 2x1 1/2 inch bars.
Approximately 32 bars. |
