Peach Streusel Bars Cookie Recipe
2 C. all-purpose flour
1/2 C. firmly packed light brown sugar
1 t. grated lemon rind
1/4 t. ground nutmeg
1/4 t. salt
3/4 C. unsalted butter
1 12-oz. jar peach preserves
Preheat oven to 375� F. Grease 9 x 9 x 2-inch square pan.
Combine flour, sugar, lemon rind, nutmeg and salt in large bowl. Cut in butter
with pastry blender until mixture is crumbly. Reserve 1 cup. Pat remaining
mixture evenly into prepared pan.
Spread preserves evenly over dough, leaving 1/4-inch border around edge.
Sprinkle with reserved flour mixture.
Bake for 40 minutes or until lightly browned. Cool in pan on wire rack. Cut into
bite-sized bars. Store for up to 1 week in air-tight container.
Makes 16 bars.
