Chocolate Coconut Balls Recipe
3/4 C. mashed potatoes
1 lb. powdered sugar
1 lb. flaked coconut
1 t. almond extract
1/3 bar paraffin wax
1 6 oz. package chocolate chips
4 squares semisweet or baking chocolate
Combine potatoes, sugar, coconut and extract. Shape into balls. Place on waxed paper, and refrigerate for 1/2 to 1 hour. Melt paraffin and chocolate in top of double boiler; keep warm over simmering water while dipping candy. Dip coconut balls in chocolate; remove with a fork, shaking off excess chocolate. Set on waxed paper while chocolate sets.
