Beet Latkes Recipe

Beet Latkes - dairy

1 cup beets finely chopped
4 large egg yolks, beaten
3 Tbsp heavy cream or undiluted evaporated milk
2 Tbsp cornstarch
1/2 tsp sugar
1/2 tsp ground nutmeg
1 tsp salt

Combine all ingredients in a mixing bowl. Fry in heavy skillet (in oil).

Serve with marmalade, apple sauce or sour cream.
