Dessert Chremslech

3 Eggs, separated
3 tb Matzo meal
1 tb Sugar
1/2 Lemon, rind, grated
5 tb Nuts, ground-(make each a heaping tablespoon)
Apricot jam

Make a snow with whites. Gradually add sugar. At slow speed beat yolks into whites. Slowly fold in dry ingredients. Fry tablespoon of mixture (to make latkehs) in hot oil; place 1/2 teaspoon jam onto each latkeh (almost in the middle), fold latkeh in half, and fry both sides of the half moon. Sprinkle with sugar if desired.

Yield: 6 Servings
