Orange Fluff

3/8 cup potato starch
1 1/4 cups water
1/4 cup lemon juice
1/2 cup orange juice
1 teaspoon lemon rind, grated
2 teaspoons orange rind, grated
1/4 cup sugar
pinch salt
2 eggs, separated

Blend starch with water, juices, rinds, sugar, salt, and margarine. Bring to a boil and cook 1 min., stirring. Add to beaten egg yolks. Fold in stiff whites when cool. Spoon into serving dishes.

SERVES: 4
