Crisp Sponge Cookies Recipe

Crisp Sponge Cookies: Panlevi
Makes 2 dozen cookies

3 eggs, well beaten
1/2 cup sugar
pinch of salt
1/4 tsp. cinnamon
1/2 tsp. vanilla
3/4 cup flour
1/2 tsp. baking powder

Beat eggs, sugar, salt and cinnamon. Blend in vanilla. Fold in flour and baking powder by hand.

Drop batter by tablespoons, 2 inches apart, on greased cookie sheet that has been lightly floured.

Bake in 350-degree oven for 10 minutes; then lower heat to 270 degrees for 5 minutes or until cookies are brown. Take out and loosen from cookie sheet.

Turn oven off and return cookie sheets to oven to crisp, about 5 minutes.
