Elbow Macaroni with Meat Sauce Casserole
16 ounces Elbow Macaroni
2 tablespoons olive oil
1/4 cup red onion, chopped
1/4 cup carrot, chopped
1/2 cup green bell pepper, chopped
1 pound ground beef
6 slices smoked bacon, diced 1/2-inch
2 cups marinara sauce
8 ounces grated Mozzarella cheese
1/2 cup Parmesan cheese
In a 2-quart sauce pan, heat oil over medium heat. Cook onion,
carrot and pepper until soft. Add ground beef and bacon and brown,
stirring frequently. Discard juices and add marinara sauce. Simmer
20 minutes. Meanwhile, prepare pasta according to package
directions; drain well and combine with sauce and cheeses in a
10x12-inch casserole.
Bake at 350�F for 1 hour. Let cool 10 minutes and serve.
