Harvest's Date Oat Scones
1 lb. (2 c.) all-purpose flour
2 1/2 t. baking powder
1 1/4 t. baking soda
1 t. salt
3/4 t. cinnamon
1/4 c. granulated white sugar, plus more for sprinkling
1/3 c. brown sugar
2 1/2 sticks (1 1/4 c.) cold butter
1 c. chopped dates
7 oz. rolled oats
3/4 c. buttermilk
Milk, as needed
Combine the flour, baking powder, baking soda, salt, cinnamon, white
and brown sugars and butter in the bowl of an electric mixer and mix
until butter pieces are pea-sized.
Add the dates and oats. Mix just a couple of turns of the mixer.
Pour in the buttermilk and mix until just combined. If the dough is
uneven, turn out of the bowl and mix by hand. Roll the dough out
3/4-inch thick and cut the scones into triangles. Brush the tops
with milk and sprinkle with sugar.
Place the scones on a baking sheet and bake at 350 degrees until
they are a dark golden brown, about 25 minutes.
Makes about 36 scones. |
