Walker's Oriental Beef Salad
4 cups romaine lettuce
1 cup blanched pea pods
1 small red onion, sliced
1 cup fresh bean sprouts
1/2 cup sliced water chestnuts
1/2 cup sliced fresh mushrooms
1 cup cooked roast beef, cut into strips
1/2 cup canned mandarin oranges (drained)
1/4 cup sesame oil
1/4 cup soy sauce
1/4 cup rice vinegar
2 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon sugar
Wash lettuce and drain well. Cut into bite-sized pieces and place in
large serving bowl. Layer pea pods, onion, sprouts, water chestnuts,
mushrooms, beef and mandarin oranges.
In separate bowl, combine sesame oil, soy sauce, rice vinegar,
garlic, salt and sugar. Mix well and pour over salad just before
serving.
Makes 6 servings.
