Shrimp Deviled Eggs
1/4 pound medium to large shrimp
6 pimento stuffed olives, chopped
4 hard cooked eggs
1 Tbs minced onion
2 Tbs chopped fresh parsley
1 tsp worcestershire sauce
1 tsp extra virgin olive oil
salt and pepper to taste
2 Tbs mayonnaise
Bring a pot of water to boil and add the shrimp. Cook for 2-5 minutes, Drain and
chop into small dice.
Halve the eggs and mash 2 yolks and reserve the rest. Add the shrimp, olives,
onion, parsley, worcestershire sauce, and oil. Mix well season with salt and
pepper. Fill the eggs and place a dollop of mayo on top, sprinkle with some of
the remaining crumbled egg yolk mixture.
Garnish with parsley and serve.
