Ham and Cheese Pinwheels
1 (8-ounce) package cream cheese, softened
1 tablespoon prepared horseradish
1 tablespoon chopped chives
10 slices (about 1/2 pound) thinly sliced ham, summer sausage or
10 slices processed American cheese (optional)
In a small mixing bowl, beat cream cheese until smooth; stir in
horseradish and chives.
Carefully spread about 1 tablespoon of the mixture over each meat
slice; top with American cheese slice, if using, and spread another
tablespoon of cream cheese mixture over cheese. Tightly roll up each
meat slice and place on a plate, cover and chill.
Just before serving, slice each roll into five pieces. Serve with
toothpicks, if desired.
