Baked Fish Supreme
2 lbs haddock or sole fillets
1/4 c butter, melted
1/2 tsp salt
1/4 tsp pepper
1/2 c sour cream
2-3 green onions, thinly sliced
1 (10 oz) can cut asparagus spears, drained
paprika
Arrange fillets in 8 portions (cutting and stacking is necessary) in
13x9" baking dish. Drizzle with butter, sprinkle with salt and
pepper. Bake 450� 15 minutes
Combine sour cream and onions. Distribute asparagus evenly on each
portion of fish; top each with about 1 T sour cream mixture. Return
to oven and bake an additional 3-5 minutes or until thoroughly
heated. Sprinkle with paprika.
