Roast Beef Potato Pie
In a microwave safe casserole, combine potatoes, beef, carrot and gravy mixture. Cover loosely with plastic wrap. Microwave on high for 10-12 minutes or till heated thru.
In large bowl, beat egg ad milk; add biscuit mix and stir until ball forms. Roll out dough on lightly floured surface to form a 10" circle. Transfer to a greased 9" pie plate. Flute edges of dough. Fill with meat mixture.
Bake at 350ºF for 30-40 minutes until crust is golden. Sprinkle with cheese and green onion. Bake an additional 2-3 minutes or until cheese melts.
Yield: 6 servings.
