Irish Bubble and Squeak
3 cups mashed potatoes
4 cups shredded cooked cabbage
1 egg, beaten
1 cup grated cheddar cheese
Pinch of freshly grated nutmeg (I omit this)
Salt and freshly ground black pepper to taste
Flour, for coating
Oil for frying
Mix the potatoes with the cabbage, egg, cheese, nutmeg and seasonings.
Divide and shape into 8 patties. Chill in the fridge for an hour. Just
before cooking, toss with a little flour.
Heat 1/2" oil in a frying pan until hot. Carefully slide the patties
into the oil and fry on each side for about 3 minutes until golden and
crisp. Drain on paper towels, then serve hot.
