Irish Potato Candy
4 tablespoons butter
1 pound powdered sugar
2 tablespoons corn syrup
4 tablespoons milk
2 tablespoons vanilla extract
1 (7-ounce) package shredded coconut
In a medium mixing bowl, cream butter and 3 cups sugar. Add milk, vanilla and corn syrup. Mix thoroughly. Add remaining sugar and coconut. Seal in container and chill in refrigerator for one hour. Shape into about 1-inch balls and coat with cinnamon. Roll each ball separately to coat evenly. Store in refrigerator in a sealed container.
Yield: 4 dozen.
