In a small bowl mix cheese with spinach and seasonings until well incorporated.
Spray cookie sheet with spray oil.
Take 3 phyllo sheet squares and spray lightly with oil spray, add 3 more sheets and spray again. Wrap remaining sheets in plastic wrap so they do not dry out.
Place a tablespoon of filling in center of phyllo square and wrap "egg-roll" style, placing the seam side down on the cookie sheet. Repeat with remaining sheets.
Bake for 7 to 10 minutes or until golden brown.
Makes 1 dozen. Can easily double batch.
Serving Suggestions: This is a great appetizer for any party and also make a great first course. It is great with other fillings too from savory meat fillings to sweet dessert fillings.
