Banana Cream Bread Pudding
7 inches brown bread, sliced and cut into triangles
3 oz. butter
6 ripe bananas, thickly sliced
2 tbsp. soft brown sugar
1 tsp. ground cinnamon
2 eggs
1 cup condensed milk
2 oz. soft brown sugar
Preheat oven to 350 F (180 C). Using a food processor, combine half the bananas,
larger amount of sugar, cinnamon, eggs and condensed milk. Blend until smooth.
Butter both sides of bread triangles. Use remaining butter to grease a 3 cup
ovenproof dish. Cover base of dish with one layer of bread triangles, not
overlapping. Add a layer of the banana slices. Repeat, ending with a final layer
of bread triangles.
Pour over cream mixture. Allow to sink in. Sprinkle with remaining sugar. Bake
for 45 minutes or until set. Serve hot.
