Microwave Roquefort Chicken
6 boneless, skinless chicken breast halves
1/4 teaspoon white pepper
4 ounces Roquefort cheese
1 clove garlic, minced
1 cup fat free sour cream
Season chicken with pepper, and place in circle fashion in microwave casserole.
Cover and cook 6 minutes per pound on high power (100%) until chicken is no
longer pink. Drain juices. In 2 cup measure, mix crumbled cheese, garlic, and
sour cream. Heat mixture for 2 to 3 minutes on Medium power (50% ) until mixture
is warm. Pour over chicken breasts, cover and cook on Medium power (50%) for
another 8-12 minutes until mixture is very hot, but not boiling.
