Never Dry Chicken 

1 whole chicken
12 oz. can of coke or sprite
3 large potatoes
1 large onion (yellow or white)
2 large carrots
any other veggies you desire (i usually add cabbage)
whole cloves
1tsp. pepper
1tsp. salt
2tsp. basil
2tsp. thyme or rosemary leaves

Preheat oven to 400 deg. F. Leave the chicken whole and put it to pan lined with aluminum foil. Make sure pan is big enough to fit chicken and veggies.

Now, cut veggies into chunks and add them to the pan. Line the chicken with the cloves as you would a ham (not too many as the cloves are very strong and will over power the rest of the flavors). Pour the coke over the chicken and then sprinkle with salt, pepper, basil, and thyme.

Cover top of pan with foil and place into the oven. Leave in the oven for 1-1/2 hrs. or until fork slides into chicken with little to no effort. Check this after the first hour.

If you desire for the chicken to have brown top you will have to baste the chicken with butter throughout the cooking, or buy the precooked chicken at the store. If you buy the precooked chicken then set oven to 325 deg. F and cook for 1 hour. You will know when the dish is done when the veggies are tender and fall apart from the fork.

This is an easy dish and easy clean up. You can add mashed potatoes to the meal and use the juice for gravy.
