Magic Mincemeat Fruitcake
2 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
2 eggs, slightly beaten
1 1/3 cups sweetened condensed milk
2 2/3cups (a 28-ounce jar) ready-to-use mincemeat
2 ups (a 1-pound jar) mixed candied fruit
1cup coarsely chopped walnuts Glaceed cherries and walnut halves
Preheat oven to 300 degrees. Butter a 9-inch tube or springform pan.
Line pan with wax paper; butter again. Sift flour and soda. Set
aside. In large bowl, combine eggs, milk, mincemeat, fruit and
walnuts. Mix well. Fold in flour mixture. Turn into prepared pan.
Bake 2 hours or until center springs back when lightly touched with
finger and top is golden brown. Cool in pan 5 minutes. Turn out of
pan; remove paper. Cool. Decorate with glaceed cherries and walnut
halves. |
