Cranberry Apple Oat Bar Recipe
3 cups rolled oats
2 cups all-purpose flour
2 teaspoons salt
1 teaspoon baking powder
2 cups brown sugar
1/2 cup applesauce
1/4 cup margarine, softened
2 cups dried cranberries
1 cup apple juice
2 cups (2 medium) apples, peeled, cubed
1 teaspoon cinnamon, ground
Blend first 4 ingredients; set aside. Beat brown sugar, applesauce and margarine
in large bowl, on high until smooth. Stir-in flour mixture until crumbly. Press
half onto bottom of greased 9 x 13 x 2-inch pan; reserve other half.
Bake in preheated 350�F oven 15 minutes.
Place cranberries, apple juice, apples and cinnamon in small saucepan; soak 20
minutes. Boil over medium high heat 5 minutes until tender, stirring
occasionally.
Spread hot fruit over crust; crumble remaining crust mixture over fruit.
Bake at 350�F 20 to 25 minutes until light brown.
Makes 48 bars.
