Raisin Bars Recipe
Dough:
2 cups brown sugar
1 cup shortening
2 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
4 cups flour
1/3 cup warm water
Filling:
2 tablespoons cornstarch
1 cup sugar
15-ounce box of raisins
2 cups water
1 teaspoon lemon juice
1 cup chopped walnuts (optional)
For the dough: Blend sugar and shortening. Add eggs, then vanilla, beating until
well blended.
Sift the dry ingredients together. Add the warm water and dry ingredients
alternately to the shortening mixture to form a soft dough.
For the filling: Blend cornstarch and sugar well. Combine with the raisins,
water and lemon juice. Cook until the mixture thickens and the liquid is clear.
Stir in walnuts.
Press half the dough into a jelly roll pan. Spread filling over the dough. Roll
the remaining dough. Place over the raisin filling. Bake at 350� F. for 30 to 35
minutes.
Note: If the top crust falls apart while you're placing it over the filling,
just patch as you go.
