Macadamia Nut Clusters
1 cup (6 ounces) milk chocolate chips
1 cup (6 ounces) semisweet chocolate chips
11 ounces white chocolate chips (such as Ghirardelli Classic White
Chips)
18 ounces unsalted macadamia nuts (roasted or raw)
Melt the milk chocolate chips, semisweet chocolate chips and white
chips in a double boiler over barely simmering water. Stir
vigorously after chocolate starts to melt (chocolate should be just
warm enough to melt, but not hot).
Remove top pan from double boiler and allow to rest for 2 minutes.
Stir in the macadamia nuts. Drop by heaping teaspoonfuls onto wax
paper, leaving space between clusters. (Use 2 teaspoons, one to
scoop and the other to push it from the bowl of the spoon.) Allow to
cool at room temperature.
Makes about 38 clusters. |
