Cornish Game Hens for Two
2 (1 lb. size) Cornish Game Hens
1/2 tsp. salt
1/4 tsp. pepper
6 tbsp. butter or margarine
1/4 cup lemon juice
1/8 tsp. paprika
Sprinkle salt and pepper into each hen. Tie legs together with string. Bend the
wings under the hens. Close the cavity with metal poultry picks.
Combine 4 tbsp. of butter or margarine with lemon juice and paprika for a
basting sauce.
Brown the hens with the remaining butter or margarine in a medium skillet.
Place the hens in a large roasting pan (no rack required) and brush with basting
sauce.
Roast at 450�F. for 40 minutes or until tender.
