Acorn Squash with Citrus Recipe

Acorn Squash with Citrus- dairy, pareve

4 md Acorn squash
8 tb Butter or margarine
8 tb Brown sugar
1 1/3 tb Orange; grated peel
2/3 ts Salt
2 Orange; peeled & cut up
1 Grapefruit; peeled & cut up
1/3 c Golden raisins.

Place whole squash in a baking pan with 1-4 inch water. Bake 45 mins. at 375F. Remove squash from oven & cut half, removing seeds. Place squash halves cut side up in baking pan & fill cavities with the brown sugar, margarine, and orange peel. Add salt & the citrus pieces. Bake for an additional 25 minutes.

Yield: 8 servings
