Grits Casserole
4 cups water
1 teaspoon salt
1 cup quick cooking grits
4 eggs, lightly beaten
1 pound pork sausage, browned and drained
1 1/2 cups shredded sharp cheddar, divided
1/2 cup milk
1/4 cup butter, softened
In saucepan bring water and salt to boil; slowly stir in grits.
Reduce heat and cook 4-5 minutes, stirring occasionally. Remove from
heat and add small amount of hot grits to the eggs; return to
saucepan.
Stir in sausage, 1 c. cheese, milk and butter;
stir until butter melts.
Pour into a greased 13x9 inch baking dish.
Sprinkle with remaining cheese. Bake at 350�F for 50-55 minutes or
until top begins to brown.
Yield: 10-12 servings.
