Butterscotch Birds' Nests
1 (11-oz.) pkg. butterscotch chips
1 T. cooking oil
1 (5-oz.) can chow mein noodles (about 2 1/2 C.), crushed slightly
1 C. peanut chocolate candies, candy-coated chocolate eggs or jelly beans
Melt together butterscotch chips and oil in heavy saucepan over medium heat or
in microwave oven on medium power 2 to 2 1/2 minutes; stir in chow mein noodles,
mixing well. Spoon about 2 tablespoons mixture into mounds (an automatic
spring-release scoop works well) on waxed paper-lined baking sheet; shape to
form nests using back or end of spoon to make depression in center. Immediately
press 3 or more candies into each center; refrigerate until set.
Variation: Use semisweet chocolate chips instead of butterscotch and melt with 2
T. oil. Instead of 1 (5-oz.) can chow mein noodles, use 1 cup chow mein noodles
and 1 1/2 C. shredded coconut.
Makes 16 to 18 nests.
