Macadamia Nut Crusted Pork Cutlet
1/3 c macadamia nuts, ground
1/3 c pork rinds, ground
� t lemon pepper
1 T chives, finely chopped
1 T parsley, finely chopped
� t seasoning salt or Mrs. Dash
1 egg, beaten
� c water
1 T Extra Virgin olive oil
2 pork cutlets
In shallow dish, mix together macadamia nuts, pork rinds, lemon
pepper, parsley and chives. In separate bowl, mix egg and water and
beat until blended. Sprinkle seasoning salt on both sides of pork
cutlet, then dredge in egg mix. Place cutlet in nut mixture and coat
with mix, then turn over to coat both sides. Heat pan on stove with
olive oil. Place cutlet in pan and cook over medium-high heat,
turning once.
When golden brown, or when temperature reaches 170 degrees with
thermometer, remove from pan and put on baking rack to let excess
oil drain. Serve with your favorite vegetable.
