Penne Pasta with Peas and Prosciutto
14 oz. penne pasta
1 T. olive oil
salt and black pepper
2 T. butter
about 4-5 oz. lean prosciutto, cut into strips
4 oz. or half a package frozen small peas
1/4 pint heavy cream
grated Parmesan cheese
Cook the pasta with oil and a little salt in boiling water until tender.
Meanwhile, melt the butter and gently cook the prosciutto and peas for at least
5 minutes. Warm the cream. Drain the pasta and place in a large, heated bowl.
Stir in the prosciutto and peas. Sprinkle with Parmesan cheese and pour the
cream over the mixture. Toss well and season with black pepper.
