Sweet Potato Salad

2 lbs. sweet potatoes, peeled and cubed (about 6 cups)
1 cup real mayonnaise
1/2 cup firmly packed firmly packed brown sugar
1 cup chopped peanuts or walnuts, toasted if desired
1/2 cup raisins

In 4-quart saucepot, cover potatoes with water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes or until potatoes are tender; drain and cool slightly.

Meanwhile, in large bowl, blend mayonnaise with brown sugar. Add remaining ingredients and toss to coat; chill 1 hour.

Serves: 8
