Common Grill Grilled Herb Bread with Baked Brie Cheese
Herb Pizza Dough (see below)
4 oz. pieces domestic Brie cheese
4 t. butter
Spicy Apple Chutney (see below)
4 t. chives, chopped
4 t. toasted almonds
Spicy Apple Chutney
1 T. vegetable oil
1/4 very small red onion, diced fine
1/4 red bell pepper, diced fine
1/4 t. dry mustard
pinch salt
1 clove garlic, minced
1/2 jalapeno pepper, minced
3 Granny Smith apples, peeled, core removed, diced into �" pieces
pinch ground allspice
pinch ground ginger
1 T. golden raisins
3 T. brown sugar
2 T. red wine vinegar
Prepare Herb Pizza Dough. Set aside.
Preheat oven to 400�F.
Arrange Brie in ovenproof pan. Dot with butter. Bake in oven until cheese begins
to puff, approximately 8 minutes.
Transfer Brie to serving plate, spoon warm Spicy Apple Chutney around Brie. Top
with chives and toasted almonds.
Brush herb bread with olive oil. Grill on both sides, making sure to get grill
marks on bread. Cut in quarters. Arrange bread around cheese.
Spicy Apple Chutney:
Heat vegetable oil in saut� pan. Add red onion, red pepper, mustard, and salt;
cook until translucent, approximately 5 minutes. Add garlic, jalapeno pepper,
apples, allspice, and ginger; continue cooking for one minute. Add raisins,
brown sugar, and vinegar and bring to a boil. Refrigerate until ready to use.

2 T. basil, finely chopped
1 T. thyme
1 T. chives
2 t. rosemary
