Four Seasons Resort Aviara's Macadamia Nut Cream Pie

Crust:
1-1/2 C. graham cracker crumbs
1/2 C. ground macadamia nuts
1/4 C. sugar
1/2 C. butter

Filling:
2 C. milk
1/4 C. butter
1/2 C. sugar
1/2 vanilla bean
2 egg yolks
1/4 C. cornstarch
1 C. white chocolate chips
1 C. toasted chopped macadamia nuts
Whipped cream, for garnish

For pie crust: Combine the dry ingredients in a bowl. Melt the butter and mix with the dry ingredients. Combine well and press into a 9-inch pan. Bake in a 350�F. oven for 8 minutes, or until golden. Cool.

For the filling: Combine the milk, butter, sugar and vanilla bean, with the beans scraped out, in a pot. Bring to a boil.

Combine the egg yolks and cornstarch until well blended. Add a portion of the hot milk to the eggs, then return the yolk mixture to the pot. Cook until the cream thickens and boils.

Add the white chocolate chips and stir until melted. Add the toasted macadamia nuts. Pour into the pie crust. Chill until set. Decorate top with whipped cream.

Makes 1 (9-inch) pie.
