Oyster Stew a la Golden Rule
Serves 6.
The Golden Rule claimed to be the biggest and best department store in St. Paul.
2 c. whole milk
1/2 c. heavy cream
1/4 c. ( 1/2 stick) butter plus 6 pats butter, divided
1 pint fresh oysters with liquor (juice)
1 tsp. salt
Freshly ground pepper
Oyster crackers
In a saucepan, heat milk and cream until they just start to simmer.
In another saucepan, melt 1/4 cup butter. Add oysters and cook just until the
edges of the oysters begin to curl. Add the oysters to the hot milk mixture and
heat through, but do not boil. Stir in salt and pepper.
To each portion, add a pat of butter. Serve with oyster crackers.
