Huber Family Farm and Restaurant's Apple
Butter
1/2 bushel McIntosh apples
4 pounds sugar
4 tablespoons cinnamon
1/4 teaspoon ground allspice
1/2 teaspoon salt
2 tablespoons Cinnamon Imperials candies (often known as "red hots")
Peel, core and dice enough apples to fill a large saucepan. Cook
over medium-low heat, stirring occasionally, until apples are
reduced to sauce, about 1 hour. Remove to a large roasting pan.
Repeat with remaining apples. The number of batches will vary with
the size of your saucepan. A half-bushel made 6 batches in a 5-quart
saucepan.
Preheat oven to 325 degrees.
Stir sugar, cinnamon, allspice, salt and Cinnamon Imperials (which
give the sauce flavor and color) into cooked apples. Bake, stirring
at least every half hour, and more often as mixture becomes thicker,
until mixture is dark brown and thickened to the consistency of
softened butter, about 6 hours.
Makes about 7 cups. |
