Mr. Friendly's New Southern Cafe Jambalaya
1/2 lb. small shrimp, peeled and deveined
4 oz. chicken, diced
1 T. Cajun seasoning
2 T. vegetable oil
1/4 C. onion, diced
1/4 C. green bell pepper, diced
1/4 C. celery, diced
2 T. garlic, minced
1 can chopped tomatoes
3 bay leaves
1 t. Worcestershire sauce
1 t. hot sauce
3/4 C. rice
3 C. chicken stock
5 oz. andouille sausage, sliced
Salt and pepper, to taste
In a bowl, combine shrimp, chicken and Cajun seasoning, working in seasoning
well.
In a large saucepan, heat oil over high heat with onion, pepper and celery; cook
for 3 minutes.
Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice
and slowly add broth.
Reduce heat to medium and cook until rice absorbs liquid and becomes tender,
stirring occasionally, about 15 minutes.
When rice is just tender, add shrimp, chicken mixture and sausage. Cook until
meat is done, about 10 minutes more.
Season to taste with salt, pepper and Cajun seasoning.
Serves 4.
