The Magnolia Plantation Inn Pina Colada Muffins
1 box yellow or butter cake mix - (1 pound)
1 t. pure coconut extract
1 t. pure rum extract
1 C. flaked coconut
1/2 C. nuts - chopped
1 can crushed pineapple - (8 oz.) with liquid
Preheat oven to 350� F. Prepare the cake batter according to package directions.
Add the remaining ingredients to the batter and mix for 1 minute. (Do not
over-mix.)
Fill greased muffin cups 3/4 full and bake for 15 to 20 minutes or until golden.
Let cool on wire racks. Serve.
