Mountain Sun Coconut-Macadamia Crusted Key Lime Pie
For the filling:
2 14 oz. cans condensed milk
9 egg yolks
1/2 C. key lime juice (fresh squeezed if possible)
zest from 3 of the limes
For the crust:
1 C. macadamia nuts, ground, toasted
1 C. coconut flakes (unsweetened), toasted
1/2 C. brown sugar
1/3 C. melted butter
Combine all ingredients for filling, set aside. Combine all ingredients for
crust, set aside. Mold crust into tart shell or pie pan and fill with filling.
Refrigerate overnight to set. Garnish with lime wheels and fresh whipped cream.
