Mrs. Wilkes' Boarding House Corn Bread Dressing

4 cups crumbled corn bread
2 cups crumbles toast crumbs
4 1/2 cups hot chicken, pork or turkey stock
3 hard-boiled eggs, chopped
1 cup grated onion
1/2 cup grated bell pepper
Salt and pepper (optional)

Preheat oven to 375 degrees. Combine corn bread and toast crumbs and add stock.

Cover and allow to sit for 5 - 10 minutes. Add eggs, celery, onion, and bell pepper.

Bake in well-greased pan for 30 - 40 minutes. Since the stock and bread are already seasoned, add salt and pepper only if desired.

Yield- 8 cups
