Old Southern Tea Room Biscuits
1 package yeast
1/4 C. warm water
1 T. sugar
5 C. flour
2 t. salt
5 T. baking powder
1 t. baking soda
3/4 C. shortening (solid)
1 3/4 - 2 C. buttermilk
Dissolve the yeast in the warm water with the sugar. Sift together the flour,
salt, baking powder and soda. Cut the shortening into the flour mixture. Add the
yeast mixture and enough buttermilk to make a firm dough. Refrigerate until
needed.
When ready to bake, roll to desired thickness and cut with a small biscuit
cutter. Place on baking sheets and allow to rise until approximately doubled in
size. Bake in a preheated 450�F. oven until golden.
