Apple Cups Recipe

Cups:
8 ounces cream cheese, softened
2 cups flour
2 sticks margarine
Filling:
12 caramels
1 (14-ounce) can condensed milk
2 cups peeled and shredded apples (use all-purpose)
2 eggs
3 tablespoons water
1 tablespoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup finely chopped walnuts
Frosting:
1/2 cup shortening
1 teaspoon vanilla
2/3 cup sugar
1/2 cup margarine
3/4 cup evaporated milk
To make cups: Cream together cup ingredients and make a dough. Press into tassie
pans sprayed with Pam (makes 4 dozen). (We used small muffin pans.)
For the filling: In medium saucepan over low heat, melt caramels with condensed
milk, stirring constantly. Remove from heat and add apples, eggs, water,
vanilla, cinnamon, nutmeg and walnuts.
Fill cups and bake 20 to 25 minutes at 350� F. Cool.
For frosting: Beat together shortening, vanilla, sugar and margarine, 10 minutes
until fluffy, adding milk gradually. Frost when cups are cool. |
