Butter-Tart Apple Pie
Topping:
2/3 cup brown sugar
2/3 cup flour
1/3 cup butter at room temp.
Mix all together until crumbly. Set aside.
Pie filling:
3 eggs
2 tsp vanilla
1/2 cup white sugar
2 tbsp flour
1/2 cup corn syrup
Whisk eggs with vanilla until foamy. Mix white sugar with the 2
tbsp. of flour and gradually beat into the egg mixture. Stir in corn
syrup and set aside.
5 apples peeled and sliced thin - about 5 cups
1/2 cup raisins
1 deep dish pie crust
Layer apples and raisins in crust so that apples are level, then
press down lightly with your hand. Pour filling over apples.
Sprinkle topping over all. Oven 350. Bake pie on bottom rack of
preheated oven for 60 to 70 min. In my convection oven, I bake it
for 45 min. at 350, then turn the oven to 325 for another 15 min.
and it's done! Cool before slicing. Store in fridge. |
