Apple Streusel Recipe

6-8 Granny Smith apples
1/2 pound unsalted butter
4-6 tablespoons cinnamon
4 tablespoons nutmeg
3/4 cup sugar

Peel, core and thinly slice the apples. Place the apples, butter, sugar and spices in a large frying pan and let simmer for about 15 minutes. Set aside and let cool.

The crust:
1 pound unsalted butter
1/2 cup sugar
4 egg yolks
1/3 cup whole milk
5 cups all purpose flour

Cream sugar and butter until light in color in a mixing bowl. Add egg yolks and whole milk and let mix for one minute. Add the flour a little at a time until all of it is just mixed. Don't over mix. Wrap the dough in plastic wrap and refrigerate for two hours. Remove the dough from the fridge and roll out to 1/4 of an inch thick to fit an 8-10-inch cake pan or a 8 x 10-inch rectangular pan. Fill the crust with the apple mixture.

The streusel
1/2 pound unsalted butter
1/2 cup sugar
1/2 cup light brown sugar
1 cup flour

Cut the butter into small pieces and rub both sugars through the butter with your fingers until crumbly. Add the flour and mix with a fork until the mixture resembles large bread crumbs. Sprinkle over the top of the apples and bake at 300 degrees for 20-30 minutes or until golden brown and bubby. Serve warm with ice cream and caramel sauce.
