Baked Apple Pancake 3 apples
4 tablespoons butter
1 cup flour
1 cup milk
6 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon nutmeg
Powdered sugar
Turn oven to 450� and place cast-iron skillet in oven while
preparing ingredients. Cut apples into thin wedges.
In a heavy skillet melt 2 tablespoons butter and saut� apples.
Place flour, milk, eggs, vanilla, salt and nutmeg in blender in
order given. Blend until mixed.
Remove skillet from oven and melt remaining 2 tablespoons butter.
Quickly arrange saut�ed apples in skillet and pour batter over
apples.
Place in 450� oven and bake 15 minutes. Reduce oven temperature
to 375� and bake 10 minutes longer.
Sprinkle with powdered sugar, slice into wedges and serve with
maple syrup.
Makes 6 - 8 servings. |
