Cantaloupe Butter
Remove rind and seeds. Cut in small pieces. Use enough water to keep
from sticking and boil till soft. Run through a sieve.
Measure 1 quart cantaloupe to 1 1/2 cups sugar, 1 tablespoon
lemon juice, 1 teaspoon cinnamon and boil till thick.
Pour into jars. Process in hot water bath for 20 minutes. |
