Island Jam
4 c Cantaloupe, peeled and diced
3 Oranges, peeled and diced
1/4 c Lemon juice
4 c Sugar
1 ts Lemon rind
1 ts Orange rind
1/2 ts Salt
3 c Bananas
Combine cantaloupe, oranges, and 1/4 cup lemon juice in heavy
saucepan. Bring to a boil and simmer for 15 minutes. Add sugar,
lemon rind, orange rind, and salt. Continue simmering for 30
minutes.
Add 3 cups sliced bananas and continue simmering for an
additional 15 minutes. Pour into jelly jars and cover with paraffin.
Can be frozen.
Yield 8 (6 ounce) jars. |
