Pumpkin Pâté Recipe

1 15-oz. can of pumpkin

1/2 of a large red onion, julienned

1/8 C. honey

1/2 t. cinnamon

1/8 t. nutmeg

Dash of ground cloves

1 lb. butter

Warm the pumpkin on low heat (you do not want it hot).

Spray a sauté pan lightly with cooking spray and sauté the julienned onion until lightly caramelized.

Mix in the honey and spices, and take pan off the heat; let mixture cool until just warm.

With an electric mixer, blend pumpkin and onion mixture together.

Slowly add the butter.

When blended, put into ramekins and refrigerate.

Serve chilled with sliced bread.

Yield: Makes about 2 pounds
