Squash Casserole Recipe

2-1/2 to 3 lbs. squash such as butternut, sugar pumpkin or hubbard

1/4 C. butter

1/8 t. cinnamon

1/2 T. dark brown sugar

Topping:

1/2 C. dark brown sugar

1/3 C. chopped nuts

Line a roasting pan with enough foil to envelop the squash. Cut squash in half, scoop out seeds and place cut side down on the foil. Add a few tablespoons of water, fold foil over squash and seal. Bake at 350 degrees about 45 minutes or until squash is tender when pierced with a fork.

Remove pan from oven, open foil and allow squash to cool. When cool enough to handle, scoop squash pulp from skins. Transfer to a bowl, add the butter, cinnamon and brown sugar, and mash or whip until smooth. Turn into a buttered 1-1/2 quart oven-proof casserole dish.

Sprinkle top of squash with brown sugar and nuts. Bake at 350� F. 20 to 30 minutes.

Serves 8.
